Cooking Thursday

 I have one more fun meal we made while on vacation.  This is something Bob saw and thought would be good.  And it was!

Muffin Tin Pizza Bombs

frozen dough for rolls
pepperoni or ham
pizza sauce
Mozzarella
 cheese, sliced or cheese sticks, cubed
olive oil
Italian seasoning
Grated parmesan cheese

Place amount of rolls you want in greased muffin pans. Cover with plastic wrap that has been sprayed with non stick spray.  I like to let mine thaw overnight in the frig, but you can take them out in the morning and let them thaw and rise on the counter too.
When dough has risen above the muffin cups, take each roll out and flatten it.  Spread pizza sauce over it, then pieces of ham or pepperoni.  Last, add the cheese.
Pull the dough over the ingredients to make a ball.  Place each dough ball back into the muffin tins, putting the spot you just closed on the bottom.
Allow rolls to rise again, until they rise above the muffin cups.
Brush tops with olive oil.  Sprinkle Italian seasoning and parmesan cheese on top. 
Bake 350 degrees for 20 minutes or until golden brown.

That sounds yummy. I'll have to see if there are GF rolls to use. It's always nice to have a few quick meals at the ready!
