Cooking Thursday

A few weeks ago, Bob went hunting with his brothers. We all try to send some food along, that doesn't need to be cooked, considering they are out in the woods, living rough.  This year I was asked to send along something they could eat for breakfast.  It had to be something they could grab and go before they headed out in the dark.
I found a recipe for a coffee cake that did the job.
It's a moist, heavy cake, with lots of cinnamon flavor.  The guys thought it was good.

Cinnamon Crumb Coffee Cake

Cake
1 stick butter softened
3/4 cup sugar
1 tsp vanilla
1 egg
2 cups flour
2 tsp baking powder
pinch salt
3/4 cup milk

Filling
3 tablespoons butter softened
1 tablespoon cinnamon
1/2 cup flour
1/2 cup packed brown sugar

Topping
5 tablespoon butter softened
3/4 cup flour
1/2 cup packed brown sugar
1 tablespoon cinnamon

1.Preheat the oven to 350F.
2.In the bowl of a mixer, cream together the butter and sugar, scraping down the sides occasionally. Add the vanilla and egg, mix in.
3.In a separate bowl, mix together the flour, baking powder and salt. Add one half of it to the mixer, and when mostly combined, add the milk. Once the milk is mostly incorporated, add the rest of the flour.
4.To make filling: in a small bowl, pinch together the softened butter, flour, sugar and cinnamon until soft crumbs form.
5.To make topping: add the butter, flour, brown sugar and cinnamon to a food processor and pulse until coarse crumbs form (You can cut in with forks or a pastry cutter also)
6.Grease a 9x9 baking pan. Pour in ½ of cake batter, and spread to all four corners. Sprinkle the filling over top, then pour in remaining cake batter, and spread carefully across the top, disturbing the filling layer as little as possible (an offset spatula works well for this).
7.Sprinkle the topping over the top and press lightly so it adheres.
Bake in preheated oven for 45-50 minutes, until a toothpick inserted comes out clean. Cool to warm on wire rack before serving.

Looks delicious. I will have to give it a try since I love cinnamon. Enjoy what's left of the week. :-)

It looks wonderful! What a treat this must have been to eat this in the uncomfortable condition of hunting.

Thanks for sharing the recipe, Mari!
It looks like a great recipe, and I think it's been 40 yrs. since I last had a bite of cinnamon crumb coffee cake.
(It's not the cake's fault..... it just isn't chocolate. LOL!)

Warm wishes.

...and it'll give them energy from the cinnamon/sugar! So they can sit in the deer blinds.

I take after my Mom when it comes to anything with cinnamon . . . love the taste and love the smell. Mom used to say, "when a recipe calls for cinnamon always double the amount it calls for". I still do that whenever I'm baking with this heavenly spice :)

How big and heavy and delicious that looks! I would have skipped the hunting and stayed inside with the cake and coffee.
