Cooking Thursday

 It's been cold here, perfect soup weather.  This recipe is one I've shared before, but when I made it last week, I was reminded of how good it was, and how easy it is to make.  So, I'm sharing it again...



Cheesy Potato Soup

4 slices bacon, cooked and crumbled
1 large onion, chopped (about 1 cup)
4 cans (10 3/4 ounces each) Campbell's Condensed Cream of Potato Soup
4 soup cans milk
1/4 teaspoon ground black pepper
2 large russet potatoes, cut into 1/2-inch pieces (about 3 cups)
2 cups shredded Cheddar cheese (about 8 ounces)

1. Stir the bacon, onion, soup, milk, black pepper and potatoes in a 6 quart slow cooker.
2. Cover and cook on HIGH for 4 hours or until the potatoes are tender.
3. Add the cheese and stir until the cheese is melted.

Yikes, I see it is a slow cooker recipe! I don't have one. But never mind, I will cook it in a dutch over for a half hour.

Yum! I love any soup, and cream of potato is definitely on my top ten favorites!!

Every Sunday..And now it's Winter, l go
to Lidl the supermarket and buy, amongst
other things four pieces of belly pork
and a pack of stewing vegetables...
Place the belly pork in a large pan of
cold water..couple stock cubes, clean,
peel the parsnips, turnips, carrots and
potatoes, leave them quite thick, and pop
them in with the belly pork, brink to boil,
and simmer for one hour...
Over the next few days l use one of the belly
pork at a time, with some of the vegetables,
giving me three decent meals..
The other piece of belly pork and left over
vegetables, l chop up, and use the shredder
to turn it into soup..giving me another few
meals to enjoy with some toasted bread...!

Nothing! Nothing! Is ever wasted in my home! :0).

The soup looks delish, Mari! I've been so busy, like everyone else, with the holiday prep and trying to enjoy the season that I've been very behind on visits. I just spent some time catching up with you, reading about your busy December days and the last day of your job.
