It's time for Slow Cooking Thursday, hosted by Sandra at Diary of a SAHM. Here's a yummy chicken recipe for you!
Maui Chicken
6 boneless chicken breast halves
2 tablespoons oil
14 1/2 oz can chicken broth
20 oz can pineapple chunks
1 medium green pepper, chopped
1/4 cup vinegar
2 tablespoons brown sugar
2 teaspoons soy sauce
1 teaspoon garlic powder
3 tablespoons cornstarch
1/4 cup water
Brown chicken in oil. Transfer chicken to 5 quart slow cooker. Add pineapple and green pepper.
Combine remaining ingredients and pour over chicken.
Cover and cook on low for 9 hours or until chicken is tender.
Serve over rice.

That sounds wonderful Mari! How does the Pineapple and Peppers look after 9 hours? I don't know if my slowcooker just runs hot, but sometimes it's all mush!
I do like some flavors of Terriyaki and this sounds like it would taste like that. Might have to try this one.
I love slow cooking. It makes a day so much easier and no hassle for dinnertime. And chicken...another favorite. This sounds delicious Mari.
cornstarch is one of those ingredients that's commonly called for that i don't have in my kitchen. off to the store with me!

That sounds totally scrumptious. Kind of like a hawaiian chicken I used to get at a cafeteria in Arkansas that has been closed for a long time. Definitely going to give it a try!

Kim - the pineapples and pepper don't turn to mush, but they are pretty soft. They still taste good though. I would think you could add them half way through if you have trouble with them getting too done.
