Cooking Thursday

Today's recipe is one that can be used two ways!  It's a great recipe for chicken, so easy to make and the chicken is very tasty.  But, for just two of us we end up with chicken for another meal.  The left over chicken can be cut into bite sized pieces and put into a casserole. So here's the recipe for both!



Italian Swiss Chicken

3 boneless, skinless chicken breast
Swiss cheese
1 can cream of chicken soup
8 ounces sour cream
1/4 cup butter, melted
1 cup Italian bread crumbs

Preheat oven to 350 degrees.
Cut chicken breasts in half and place in 7x11 pan.
Place swiss cheese over chicken, covering each piece.
Combine soup and sour cream and pour over the Swiss cheese.
Mix the bread crumbs with the melted butter and spread over the top of the sauce.
Cover with foil and bake for 45 minutes, then remove foil and bake another 15 minutes.

For leftover chicken:

Chicken Shepherd Pie
Leftover chicken and sauce
1 can green beans, drained
Mashed potatoes (Can use Bob Evans mashed potatoes to make it easy)

Cut chicken into bite size pieces and put in casserole.  Pour remaining sauce over top.  
Place drained green beans over the chicken.
Spread mashed potatoes over the beans.
Bake at 350 degrees for 45 minutes.

I love meals that can be repurposed for another dish—such a great way to save time and avoid food waste.

I can't eat the first one but can think of ways to make it with substitutions and your beans and potatoes reminded me a an old favorite, mash ground burger around a glass pie plate, like a crust, pile mashed potates in it, hollow out a hole like a volcano and fill with drained garden peas. my kids love its, so did I and bob die when I made it for him. I can't eat it now, but I can make it for a few days for bob. make and then reheat

Thanks for your kind comment on my blog, as well.
It has been a big learning curve for me to cook for two, and even after practicing for about a decade, I still get leftovers once in a while.
I tease my husband.. ' we will eat it now, and leftovers later and if it's still isn't gone, I'll freeze dry it and we can eat it in ten years..
