Cooking Thursday

I made one of our favorite pies the other day. It's really one of the easiest pies I make, and is always good!


Peach Pie

Pastry for 9 inch, 2 crust pie
5 cups sliced fresh peaches
1 teaspoon lemon juice
1 cup sugar
1/3 cup flour
1/4 teaspoon cinnamon
2 tablespoons sugar

Heat oven to 425 degrees. Prepare pastry, and place one crust into 9 inch pie plate.
Mix peaches and lemon juice.
Mix 1 cup sugar, flour and cinnamon; stir peaches into mix.
Turn into pastry lined pie plate. Cover with top crust, and place slits in crust.
Seal crusts and flute edges.
Brush water over top crust and sprinkle 2 tablespoons sugar on it.
Cover edge of pie with 2 inch aluminum foil to prevent excess browning.
Bake for 30 minutes, remove foil and bake for 15 more minutes or until crust is brown.

Whhaaaaat? Did you make that pie in the picture? That CRUST! Incredible. And I wonder where you got fresh peaches? Please do tell. I did not taste a peach all summer; can you imagine? I must make this pie but I know it won't look like yours, haaahaha. xoxo

My favorite is an odd one probably...blackberry. peach is not on our list. Why? I don't like cooked peaches. More for you and Bob, I guess. lol

I don't think I have ever had a peach pie like this one Mair. We always have crisp or cobbler. It looks yummy.

Yum! I think it must be the season, because I have been thinking of pie all the time lately. I've been doing Weight Watchers so I decided no pie unless it's an occasion . . . so last night I told Steve, I think we should have a dinner party. Translation: I need pie! LOL

Oh, yum! I love peach pie. When I little, my grandparents had a few peach trees and they would freeze most of the fruit to use all winter in pies and in stewed fruit to put over ice cream or rice pudding. I loved it all!

Sally cracks me up! Hahhaha! I love peach pie and yours looks like a pie from a fairy tale. It looks like a roof on English houses. How did you do that???? I am going to try to make one like it. You should probably post your pie dough recipe. It looks divine!!!!
