It's soup time! Here's a good one for those cold nights!
Beef Barley Soup
1 tablespoon oil
1 pound lean boneless beef, cut into 1 inch cubes
3 cloves garlic, minced
1/2 teaspoon salt
1 teaspoon black pepper
3 ribs celery, chopped
1 onion, chopped
3/4 cup barley
1 teaspoon thyme
1 teaspoon oregano
64 ounces beef broth
1 can tomato soup
Heat oil in large pot over medium high heat. Add beef and garlic and saute 5 minutes or until beef is browned.
Transfer to a 5 quart slow cooker. Add remaining ingredients and stir to combine.
Cover and cook on low for 8 hours.

I love Beef Barley Soup! Unfortunately, my family is not big on soup....but I've got some time yet to work on them! The recipe looks fabulous!
Can hardly wait till my kitchen is done so I can try some of these recipes out,yummy.
Mmmmmm, mmmmmm, MMMM!!!! And the eerie part of your post is, Bud and I were just talking about how long it's been since I've made anything with barley, just the other day. Now, I'm gonna hafta make it. This sounds easy and so scrumptious.
