Cooking Thursday

I made the best dessert during Christmas!  This recipe makes individual, small desserts that look like they came from a bakery. And - it may be the easiest dessert I've ever made!



Chocolate Ganache Dessert

20 oreos, or 1 1/2 cups crushed
6 tablespoons melted butter
8 ounces Ghirardelli bittersweet chocolate
4 ounces Ghiradelli semi sweet chocolate
12 ounces heavy cream
toppings of your choice - crushed peppermint, raspberries, strawberries...

Stir together the melted butter and crushed oreos. Press into a 12 section mini cheesecake pan. Place in refrigerator while making the filling.
Heat the cream in the microwave or in a small pan until hot but not boiling. Break chocolate into pieces and place in a bowl.  When cream is hot, pour it over the chocolate and allow chocolate to melt. Stir together until smooth.
Pour filling over oreo crust and cover with plastic wrap.
Refrigerate until dessert is set.
Remove portions as needed from pan.  Top with whipped cream and sprinkle topping of your choice over all.

*You don't have to use Ghiradelli brand chocolate, but make sure you use good chocolate.

Christmas Eve

We had our family Christmas celebration on Christmas Eve.  Laura, Heather and their families came for supper that evening.


We had a pretty simple supper; sliders, salad, mac and cheese and some Christmas treats.




The kids were enjoying their suppers.  Alaina is a huge fan of sliders, and Cassie loves "noodles".  




Connor was getting lots of attention.




We always read the Christmas story before opening presents.  I try to find a book that tells the story, and this year Ruby read it.




Cassie was happy with these doll clothes.




This made us all laugh.  We got Laura a plant trolley, to help move big potted plants.  It came in a big box which was not easy to wrap.  Imagine our surprise when she opened it and inside was another box, all sealed up - about half the size!









Such fun opening presents!

A little catch-up

Hi friends!  I'm back from my little Christmas break.  Although I wasn't commenting I did try to read and keep up on your posts.

When I left you, we were on our way to our sons home in KY for an early Christmas celebration.



Our day of travel started with bad roads as we had a bad storm the night before.  We saw lots of cars in ditches and medians but made it safely after an 8 hour drive.


Andy made us a wonderful breakfast the next morning and then we did a little gift exchange.



Laura had sent a few gifts along with us, and I thought this was so cute.  Ruby made slime for Andy and Nikki and had put little add ins into it to personalize it for each of them.



They live about an hour from Nashville, so after that they took us there to see the Grand Ole Opry Hotel.  It's beautiful at any time, but even more so when decorated for Christmas.


There's a river inside and you can buy tickets to go on it.  However, the line was soooo long, so that didn't happen.

Outside, there were lots of decorations that would be beautiful at night.  There was also a gingerbread decorating event going on, and ice skating.  

We left there and walked around the Grand Ole Opry Mall which is huge!



They took us to a nice steak house for dinner.




After supper we walked by the Grand Ole Opry to see their decorations.

Then it was time drive back.  The next morning we went out for breakfast together before beginning the drive back home.

It was a lot of driving, but so nice to spend time with them and was worth the drive!
