Slow Cooking Thursday

Sandra is hosting Slow Cooking Thursday again so it's time for another recipe. Today's recipe is a good sandwich, meaty enough to keep Bob happy!
Beef Barbecue
1 boneless chuck roast (approx 3#)
1 cup barbecue sauce
1/2 cup apricot or peach preserves
1/3 cup chopped green pepper
1 small onion, chopped
1 tablespoon mustard
2 tablespoons brown sugar
Cut roast into quarters; place in a greased 5 quart slow cooker. In a bowl, combine the barbecue sauce, preserves, green pepper, onion, mustard and brown sugar. pour over roast. Cover and cook on low for 7 - 8 hours until meat is tender.
Remove roast and thinly slice; return meat to slow cooker and stir gently. Cover and cook 30 minutes longer. Serve beef and sauce on rolls.
Yield: 12 servings

Mari,

I so enjoy your Slow Cooking Thursdays. This is another great recipe that hubby and I will enjoy.

Take care and do watch The Boy in the Striped Pajamas. I watched it again today with hubby and it was just as good the second time around. Unusual for me to watch a movie twice.

Blessings,
Mary

This sounds soooo good. I bet it would be good over rice too.

This looks great!

Last fall we got a side of beef and (unlike me) my guys aren't fans of pot roasts. So we have mostly chuck and assorted other roasts left in my freezer. I've been looking for recipes like this!

Thanks!

Hi Mari! This sounds really good. I'm on the lookout for more good beef recipes as we are fixing to put another beef in the freezer next week. I'm glad I ran across this!
Have a great day! (I always enjoy your blog)

apricots/peaches? who knew! ☺

Sounds great! I've always done slow-cooker BBQ as a two-step process: I cook the meat one day, then shred it and cook with sauce on the second day. I will have to try your recipe and save myself some time!

See I am not a fan of fruit in food, but this sounds really good.
