Cooking Thursday

Today's recipe is a vegetable recipe.  Summer is coming and I'm looking forward to fresh fruit and vegetables!  Have you ever roasted your vegetables?  I think it's my favorite way to eat them.  It brings out the flavor and is so healthy. Here's a recipe that lets you mix and match the veggies you want to use.  I'm sure you'll like this one.



Oven Roasted Vegetables

1/4 cup olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
2 bell peppers, any color, cut into 1 1/2 inch pieces
1 medium onion, cut into 1 1/2 inch pieces
1 zucchini, cut into thick slices
1 cup green beans, cut in 1 1/2 inch pieces
1 1/2 cups white mushrooms, quartered
1 1/2 cups cherry tomatoes

Preheat oven to 425 degrees. Line large baking sheet with parchment sheet.
In large bowl or plastic bag, mix together the oil, garlic powder, Italian seasoning, salt and pepper.
Add vegetables and toss to coat with oil mixture.
Spread vegetables out on baking sheet, try to keep in a single layer.
Place in oven for 15 minutes, then flip vegetables and return to oven for 10-15 minutes.
May drizzle with balsamic vinegar if desired.

* You can mix and match the veggies to what you like or what you have on hand.  You can use broccoli, Brussel sprouts, cauliflower, carrots. I did try yellow squash and won't use it again as it was quite watery.

This looks like a nice pan of GOODNESS! We have been eating a lot of fresh veggies lately and it makes me feel good to that our meals are a lot healthier. I cooked brussel sprouts last evening and they were so good. My grandson told me to try topping them with "Mike's hot honey" and broil them for just a few minutes...a must try if you like brussel sporuts.

Hi Mari, I have roasted potatoes, carrots and sweet potatoes by lightly coating them with olive or avocado 🥑 oil, then a little salt and pepper. I really like your photo and recipe along with the other suggestions you gave on vegetables. Love this, thank you so much for sharing ❤️

Healthy and so easy. You can do the cutting ahead of time, too!

I love roasted vegetables! I usually throw a chicken breast on the baking sheet and call it dinner.

Sounds and looks delicious!! I've not roasted veggies before, but will have to try this! Wonder if it works a bit faster in an air-fryer? Hmmm...

I have eaten roasted carrots and potatoes, but not the other things in the photo. I don't eat onions or anything that is cooked touching them. I can't eat pizza that comes with onions by picking off the onions. that popped in my head when I saw the photo.

Roasting veggies is my favorite way too! (or in an egg scramble or bake). This is what Matt & I often do with any leftover veggies that need using up in the fridge. Just make up a big tray of whatever is in there and season up in a very similar way. If you want to take it over the top when you're done and pull them out squeeze lemon over them and sprinkle parm. Or else drizzle some sweet balsamic vinegar over them. 😋 Yum!
