Cooking Thursday

Todays recipe is a good one for a brunch, but would be good anytime you want fresh fruit.  I made it last week to serve with breakfast when Jenny was here and we enjoyed it.




Fresh Fruit and Yogurt Salad

1 small orange, peeled and diced
3/4 cup fresh pineapple, diced
3/4 cup fresh strawberries, sliced
3/4 cup fresh blueberries
3/4 cup fresh raspberries
1/2 cup sliced grapes
1 small banana, sliced
4 tablespoons plain yogurt
1 teaspoon white sugar

Stir yogurt and sugar together in bowl.  Stir in fruit to coat with yogurt mix.  You may add more yogurt if needed and can change fruits to your taste.

That looks so good and healthy too. My problem is I open the frig and then go right to the freezer for ice cream.

It looks delightful, AND cooling! It would be great for a picnic, or to make a big batch for a church carry-in lunch.

I have yogurt and fruit for breakfast most mornings. Blueberries and Greek vanilla yogurt most of the time, but any additional fruit is so good and refreshing!!

That looks delicious! I just picked up some fresh fruit at the store this morning so I will give this a try.

That looks delicious! I never have plain yogurt on hand, however. I like Yoplait with raspberries or strawberries or peaches best. But I think even that would be good with the fresh fruit, as I often mix it with fresh fruit and top it with granola.

Lovely! I love fruit and yoghurt! And .. as I type homemade dairy-free yoghurt is cooling in my kitchenaid to then ferment overnight.
