Slow Cooking Thursday

Thursday means in time for another recipe. Here's one that I think is really good, but I don't make often because some of the family have a thing against pineapple in main dishes!

Maui Chicken
6 boneless, skinless chicken breasts
14 1/2 oz can chicken broth
20 oz can pineapple chunks
1/4 cup vinegar
2 tablespoons brown sugar
2 teaspoons soy sauce
1/2 teaspoon garlic powder
1 medium green bell pepper, chopped
3 tablespoons cornstarch
1/4 cup water

Place chicken breasts in slow cooker. Combine remaining ingredients and pour over chicken. Cook on low for 9-10 hours. Serve over rice.

I'm Bonnie's dad, responding to your note on my blog, for which thanks! I love reading Bonnie's blogs and often go read her friends' blogs, too. I love to read the comments, and I notice that you leave comments as unfailingly as anyone.

I think it's great communicating with folks and making new friends from all around the world. Our family really grew up overseas, so having connections with other lands and peoples is nothing new.

I don't blog as often as I'd like. I'm amazed at how much people are able to post. The wedding post took me half of Saturday, with editing, uploading, and then writing. Anyway, it was fun, and I wanted our family and friends to see the photos as quickly as possible.

That sounds delicious to me! I have the same problem though - someone in my family says that "fruit doesn't belong with meat." I was told that when I put pineapple on ham...

LOL at the pineapple, I'll be honest, I don't usually like fruit in recipes unless it's a dessert, but I've tried some really good ones that may just change my mind LOL
