Cooking Thursday

It's fresh tomato time!  Fresh tomatoes are so much better than the ones we get shipped to us in the winter.
I have a great recipe for those tomatoes.  I had this the other day for lunch.  It was quick to make and it was a special treat at lunchtime.

Baked Parmesan Tomatoes

Tomato
salt and pepper
oregano
grated parmesan cheese (I used shaved because that's what I had)
parsley

Heat oven to 400 degrees.
Slice your tomato and place on paper towel to drain for a few minutes.
Place tomato slices on parchment paper lined cookie sheet.
Sprinkle tomato slices with salt, pepper and oregano.
Sprinkle parmesan over top.
Place in oven for 5-10 minutes, until cheese is melted and bubbly.
Sprinkle with parsley and enjoy!

This recipe is similar to the tomato bruschetta one I make. I love home grown tomatoes and cannot wait for ours to turn red. Getting close. Hope you have a great weekend. Janice

Perfect timing for this recipe, the tomatoes are starting to ripen.

That looks so good. You can beat fresh from the garden tomatoes.

That looks and sounds so good! I wish I had some really good homegrown tomatoes to enjoy. We just don't have a good farmer's market here anymore, and right now it's too hot for most of the home garden tomatoes. But I would love this if I could find a tomato that is worthy of it! LOL.
