Cooking Thursday

My sister Cheri gave each of us the best granola I've ever had this year for Christmas.  She said her family likes it on ice cream or in yogurt.  I'm not much of an ice cream lover, but I did enjoy mine in yogurt.  Another way to use it for a quick lunch is to slice an apple, spread peanut butter on it and sprinkle granola over top.  It is so yummy! 
She shared the recipe with me and said I could share it with you too.  Enjoy!

Best Granola Ever

1 container old-fashioned oats (6 cups)
8 oz. Sliced almonds
2 c. dried cranberries
1 c. light-brown sugar
1 tsp. ground cinnamon
½ tsp. salt
1½ stick unsalted butter
½ c. Honey

Preheat oven to 350 degrees F.
In a large bowl, toss together all ingredients except butter and honey.
In a small saucepan over medium heat, melt unsalted butter. Stir in honey. Pour over oat mixture and toss to distribute. Spread granola onto a parchment lined baking pan* and bake, stirring occasionally, until oats are toasted and sugar begins to caramelize, 35 to 40 minutes.
Cool completely on pan. Transfer to an airtight container.
* Cheri said she found it works best to use a regular aluminum pan rather than a dark, non-stick pan as the granola may burn.

Sneaking over here before Thursday because I will be away from the house most of the day. This granola recipe sounds really good. I'll be giving it a try sometime soon.

Awesome! Thank you and your sister for sharing the recipe with us. When I was last at Britt's, I made the oatmeal and raisin cookies. Instead of the way I like them, I did the little teaspoons. Hunter loved them, said they were like healthy granola bites. She took a few in her lunch at school. When she got home she told me her friends wanted her to bring more. Lol
