I love tomatoes, and this is prime season for them. I like to eat them fresh, on BLT's, in salads... but I also have a recipe where they are roasted and are oh, so good!
I make these for lunch for myself and they are really a treat.
Balsamic Roasted Tomatoes
Large tomatoes
Minced garlic or garlic powder
Olive oil
Balsamic vinegar
salt
pepper
sugar
Oregano, thyme, basil
Preheat oven to 450 degrees. Wrap a rimmed baking sheet with foil and line with parchment paper.
Cut tomatoes into 3/4 inch slices. Remove seeds and juice. Poke holes
in the bottoms of any end pieces. Drain, cut side down on a paper towel
or a few minutes.
Place tomato slices on prepared pan. Sprinkle with garlic, then drizzle
with olive oil and balsamic vinegar. Sprinkle with salt, pepper and
sugar.
Place in oven for 20-25 minutes, until tomatoes are soft, dark and carmelized.
Sprinkle with herbs, allow to sit for a few minutes and enjoy!

Oh, I'm right there with you loving tomatoes. Especially homegrown and right out of the garden. I sure do miss that! These look SO good!

Yum! I'm not one that can just eat a tomato (I'm weird that way and I think it's a texture thing) - but put this on toasted bread, like a crostini and I'm in heaven!! ;) xo
I dont think I have ever had roasted tomatoes, but the ingredients sound good, so I know it is!
Mari, I am a tomato lover as well and get them in any form. This recipe sounds delicious and I am definitely going to try it....
