Here's a recipe I tried last week for red skin potatoes. They're an easy side dish and were very good!

Rosemay-Garlic Oven Roasted Redskin Potatoes
1 1/2 pounds baby redskin potatoes, washed and halved
3-4 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons garlic powder
2 teaspoons dried rosemary
Preheat oven to 375 degrees.
Stir together the olive oil, salt, pepper, garlic and rosemary. Add potatoes and toss to coat.
Place on a cookie sheet lined with foil.
Bake for 35-40 minutes, turning halfway through.
Enjoy!

I make these and they really are good! I don't think I've ever eaten a potato that I didn't like. ha.

Hi Mari! I am visiting my friend this week who is recovering from surgery. We made baked potatoes last night...they were good, but these look marvelous!
We'll have to try these at our next meal if we plan on spuds. I'm Irish, and you just can't miss with potatoes!

i do this to red potatoes all the time. "charlie's seasoning" is what i use, but essentially its salt, pepper, garlic.
