Rhubarb Coffee Cake
1/2 cup oil
1 1/2 cup sugar
1 egg
1 cup milk
2 heaping cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups rhubarb, cut thinly
1/2 package strawberry jello
1/2 cup sugar
1 tablespoon cinnamon
Preheat oven to 350 degrees. Stir together oil, sugar and egg. Add milk then stir in flour, baking soda and salt. Stir in rhubarb. Pour into a greased 9 x 13 pan.
Sprinkle the 1/2 package of jello over top and swirl through batter with a knife.
Mix together the 1/2 cup sugar with the cinnamon and sprinkle over the batter.
Bake for 40 minutes or until cake tests done.
Serve topped with whipped topping.

What a great combination. I love rhubarb. My mom used to make big bowls of rhubarb sauce. Of course, as an adult I was dismayed to discover how much sugar was required to make it taste as delicious as my mom's, haha!
I LOVE rhubarb, and would pick it from the garden (actually it grew beside the garden and came back each year) and just munch on a stalk. Sour goodness! It doesn't grow in Florida. I miss it, though it can be found at Publix sometimes - imported and not nearly as good. Thanks for letting me reminisce!
Rhubarb and strawberries remind me so much of my late father in law. He would put them together in a quart jar and eat some with each meal in the summer. My middle daughter loves it too and says it reminds her of him as well. Your recipe looks easy enough...I may have to try it, but with another fruit for me...
