Cooking Thursday

The recipe I'm sharing today is one I got from Bob's sister. It's easy to throw together, is good and it's healthy too!



Salsa and Black Bean Chicken

3 large chicken breasts (about 20 ounces)
1 can corn
1 can black beans, drained
1 jar salsa of your choice
6 slices Velveeta Queso Blanco cheese

Stir together corn, black beans and salsa in a 7x11 or 9x13 pan.
Cut chicken breasts in half and place into salsa mix, pressing chicken down so salsa surrounds the meat.
Bake at 350 degrees for 45-50 minutes.
Remove from oven and put one slice of cheese over each piece of chicken.
Place back into oven for about 5 minutes, until cheese melts.
 Serve chicken with salsa and bean mix.

6 servings, about 200 cal each.

I couldn't figure out why you had frosting on your chicken! lol

I've made something very similar to this and it was very good. Had a different cheese on it, but basically the same.

This looks great. We've been making black bean and salsa and cheddar omelets lately. I mix the black beans with the salsa, heat them in the microwave, then add them to the omelet on top of shredded cheddar just before folding the eggs over. Finish with a dollop of sour cream. It's pretty spectacular :-)
