Slow Cooking Thursday


I've got a Slow Cooking recipe for you this week. We had it for supper tonight and we all enjoyed it!

Santa Fe Chicken
(From Gina's Skinny Recipes)

24 ounces (1 1/2 pounds) chicken breast
14.4 ounce can fat free chicken broth
14.4 ounce can diced tomatoes with mild green chilies
15 ounce can black beans (drained)
14 ounce can corn (drained)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon cayenne pepper to taste
salt to taste
black pepper to taste

Combine broth, tomatoes, black beans, corn, garlic powder, onion powder, cumin, cayenne and salt in crock pot. Lay chicken breasts on top and season with salt and pepper to taste.
Cook on low for 10 hours. Remove chicken and shred. Return to crock pot and stir.
Serve over rice. May top with a little low fat shredded cheese.

Makes 8 servings, 1 cup each @ 190 calories

That looks and sounds delicious. Right now, J and I are doing the Paleo way of eating...aka as the Primal diet. That means, nothing processed and no bread, rice, white potatoes or pasta. I'm sure missing bread and pasta!
