It's Thursday and you know what that means! The lovely Sandra is again hosting Slow Cooking Thursday. Today's recipe is one I got from Healthy Cooking, so it tastes good and it's good for you!

Zesty Mexican Chicken
6 boneless, skinless chicken breast halves
14 1/2 ounce can diced tomatoes
1 large onion, chopped
1 medium green pepper, chopped
2 garlic cloves, minced
2 tablespoons lime juice
1 tablespoon hot pepper sauce
1/4 teaspoon salt
1/4 teaspoon pepper
3 cups hot cooked rice

Place chicken in 4 quart slow cooker, coated with cooking spray.
In a large bowl, combine tomatoes, onion, green pepper, garlic, lime juice, pepper sauce, salt and pepper. Pour over chicken.
Cover and cook on low for 5 hours or until meat thermometer reads 170 degrees. Serve over rice.

That sounds yummy and easy. I'm gonna have to invest in a second smaller crock pot since I just have the great big one. You know, after the whole leftover fiasco at my house.

I'm off schedule. I used my slow cooker on Tuesday! I made pulled pork in it, yum!
Sounds great! My crock pot is going as we speak with it for supper.
