Cooking Thursday


I had supper at a friends home last week, with a group of ladies I've been in a Bible study with. We had a great time together and had a wonderful supper!
We started our evening with this wonderful fruit salsa. We all thought it was so unusual and good. (Excuse the picture - we'd been enjoying it for a while before I thought to take the picture)
It was great with tortilla chips, but we all thought it would be good with chicken or fish too.

Bonnie's Island Salsa

1 cup peeled, chopped pineapple
1 cup peeled, chopped mango
1 cup chopped red or yellow bell pepper
2/3 cup peeled, chopped kiwi fruit
1/2 cup finely chopped red onion
1/4 cup finely chopped cilantro
1 teaspoon fresh lime juice

Combine all ingredients in medium bowl. Refrigerate for at least 2 hours or overnight before serving.
Makes 4 cups.

Now, I would have never thought of using fruit as a salsa! And it looks so darned yummy. Oh yes, I bet it would be good with a piece of grilled chicken breast or a seared salmon filet. DEEEElicious.

Yummy! I've made mango salsa before using all the ingredients listed here except pineapple and kiwi. We really like it (especially with grilled fish). Going to have to try this one!
