Our special volunteer

We have a special volunteer who comes to the nursing home every other week.  I think he may be the most anticipated volunteer we have.  His name is Bentley, and he's a dog!  He is very gentle and is well trained.  He stands right next to people and lets them pet him.
This week, he came in costume for Halloween.   I don't think he was too happy about this outfit because he didn't want to look at me for his picture. Our residents loved it though!

Isn't he cute?

Cooking Thursday

This cooler weather is definitely chili weather!  I made a batch last week and tried out a new recipe.  It was supposed to be a copycat recipe for Wendy's chili, but we thought it was thicker than Wendy's and didn't have the same flavor.   It might not taste just like Wendy's but we both really liked it and I will be making it again.

Wendy's Chili

2 pounds fresh ground beef
1 quart tomato juice 1 (29-ounce)
1 can tomato paste 1 (15-ounce)
1 can red kidney beans, drained 1 (15-ounce)
1 can pinto beans, drained 1
1 medium-large onion, chopped (about 1 1/2 cups)
1/2 cup diced celery
1/4 cup diced green bell pepper
3 tablespoons chili powder

1 teaspoon ground cumin (use more for real flavor)
1 1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon sugar
1/8 teaspoon cayenne pepper

In a large skillet, brown the ground beef. Drain off the fat. Put the beef and the remaining ingredients in a 6-quart crock pot. Cook for 6-8 hours on low.
