Cooking Thursday

Our church has a table set up from mid-summer to Fall with produce people bring from their garden to share.  Last week someone brought a large amount of different types of peppers. There were still quite a few left after church and the family that brought them told me to take them home and make stuffed peppers.  They also said we had to try the banana peppers and promised they weren't too hot!  I've never had them before, but decided this was the time to try them.  I used the banana peppers, but also a few regular green peppers and some mini sweet peppers.  This recipe isn't the typical red sauce stuffed peppers, but uses cream cheese and makes a cheesy, creamy filling.
They were really good and the leftovers heated up well too. The recipe said the filling froze nicely, so I froze half and will be having stuffed peppers again.

Cheesy Stuffed Banana Peppers

1 pound Italian sausage, browned and drained
8 ounces cream cheese, softened
2 cups shredded, cheddar cheese
salt, pepper, garlic powder to taste
banana peppers  (I also used green peppers and mini sweet peppers - use whatever you have)

Preheat oven to 400 degrees.
Slice peppers in half and remove seeds and membrane.  If you are using small peppers, just core and remove seeds.
Brown sausage and drain, stir in cream cheese, cheddar cheese and seasoning.
Lay peppers in a row and fill or stuff each pepper.
Place peppers on a baking sheet or pan, bake for 25-30 minutes until slightly browned or pepper is soft.

*If you have leftover filling, it freezes well. Just remove and thaw when you have more peppers to use.

That looks good, Mari.

I bet the cream cheese would have cooled down any extra heat. I have never tried banana peppers.

We hopefully picked our last pepper harvest tonight. I like the idea of your produce table. Ours are in a tray box from Aldi and headed to the local food bank tomorrow.

Peppers and cream cheese go together really well. I love banana peppers. They are one of my favorite items in the salad we get from Olive Garden...

These sound very good! The cream cheese might help take some of the bite out of a hot pepper, too. Yum! Thanks, Mari!

I always forget about making stuffed peppers! This recipe sounds so good and I like that it's unique. I love peppers with the protein ranch dip Matt makes - they are so crispy and bright in flavor and I love that! 😋

You have the BEST recipe ideas, my friend. We love stuffed peppers, but have never thought to try them like this! Thank you for sharing. I will have Steve get some peppers at the farmer's market. Have a cozy Sunday. It is raining here, and I am snuggled on the couch for the day!
