I like redskin potatoes. Usually I just boil or roast them, but sometimes when I want something that looks a little more special, I make these redskin mashed potatoes. They don't need gravy - they are perfect all by themselves!
Redskin Mashed Potatoes
3 pounds small redskin potatoes
4 ounces cream cheese
4 tablespoons butter
seasoned salt and pepper to taste
Wash and half the potatoes, boil until tender. Drain and place back into pan on stove. Turn stove on to low heat to steam off any remaining water, and add cream cheese and butter. Turn heat off, and mash by hand with a potato masher, leaving skin on potatoes.
Season with salt and pepper to taste. Enjoy!

I like red skinned potatoes too, and these look so good, especially with the cream cheese. Gonna give this a try.
I am one of those Babies who does not like texture in my potato dishes.lol I read that Queen Elizabeth prefers sieved veggies just like her nanny used to make her. lol My friends always taugh at me about my love of smooth things.

My Joe doesn't like gravy so we rarely have gravy for mashed potatoes. I use sour cream and lots of butter when I make mine, too! Yum!

Chad likes using red skin potatoes. He has encouraged me to get out of my comfort zone and use other potatoes. This looks like a good recipe.
I remember when I first heard of "party potatoes" nearly thirty years ago. You just make your mashed potatoes with butter and milk, salt and pepper, then add a generous dollop of sour cream. It takes them to another realm. Then many years after that, we had "dirty mashed potatoes" at a restaurant. That's where you don't bother to peel them, then make party potatoes. This recipe reminds me of that. There's nothing better. xoxo
Yum! Adding cream cheese is how I make mashed potatoes too :) Sometimes I'll throw a few garlic cloves in to cook with the potatoes; they impart a faint garlic flavor but not too intense since they've been boiled. I've never met a potato I didn't like! haha
