Cooking Thursday

 How do you feel about egg salad?  It seems people really like it or they really don't like it at all.  I like it, but it's not something I make often.  This recipe is one I usually make once during the summer.  It's good for those really hot days.  It's an egg salad that is a step above the regular.
I got this recipe from a lady who went to my church when I was young.  She immigrated from the Netherlands and said it was good Dutch version of egg salad.  :)
We like it here, of course Bob thinks anything is better with bacon! I half the recipe now though, 12 eggs is just a little much for the two of us.


Egg Salad

1/2 pound bacon, cooked and crumbled
12 hard boiled eggs
1/2 cup finely chopped celery
1/4 cup finely chopped onion
3/4 -1 cup mayonnaise

Mix well. Chill before serving.

We like egg salad, and this one looks good! We would halve the recipe as well.

That looks really good! I love egg salad. Rich like's it plain so I usually just put dill and mayo in mine.

Ugh I adore egg salad BUT here is my thing: I have to make it and eat it fresh. I do not like hard boiled eggs after they have been in the refrigerator. I can eat them in potato salad that has been refrigerated for maybe a day, but that's it. Now THIS recipe sounds interesting because I have never put bacon in my egg salad and that sounds delicious. I do not use onion in mine -- only eggs, sweet pickle relish, celery, and Duke's mayonnaise. Maybe a little spritz of mustard. Twelve eggs! Mercy. That is egg salad for a crowd. I would have halved it too. xoxo

We had egg salad a couple of days ago for lunch. I never thought of putting bacon in it. Everything is better with bacon so I'm definitely going to have to try it!

LOVE egg salad. I have never put bacon in mine but I love bacon and I can see that being amazing. I usually do my eggs, either green or black olives, A hint of mustard, salt and pepper and lots of mayo. Thanks for sharing.
