Cooking Thursday

I made a few of my moms old recipes last week, and I thought I would share one with you.  It's a popular one, and I bet lots of you have made these before.  If you haven't had these, you need to try them!  They are full of lemon flavor, moist and refreshing.

Lemon Pie Bars

3/4 cup softened butter
1/2 cup powdered sugar
1 1/2 cup flour
Mix together and press into 9x13 pan.  Bake at 350 degrees for 20 minutes

While baking mix together:
4 eggs, slightly beaten
2 cups sugar
4 Tablespoons flour
8 Tablespoons lemon juice
Pour over baked crust and bake another 20-25 minutes.  Cut while warm.  When cool, sprinkle top with powdered sugar.

One of my favorites for sure. Never made them though. I don't think I wanted to know how much sugar it takes to make them taste so delicious! Haha!
