I have a good cookie recipe for you. They look like Molasses cookies, but they are actually a crispy chocolate cookie. They have cinnamon in them, which is where the Mexican part of the name comes from. My family loves these!
Mexican Chocolate Crinkles
3/4 cup Crisco
1 cup sugar
1 egg
1/4 cup light corn syrup
2 squares unsweetened chocolate, melted
1 3/4 cup flour
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 cup sugar (to roll cookies in)
Preheat oven to 350 degrees.
Cream shortening, sugar and egg. Add syrup and melted chocolate. Add flour, soda, salt and cinnamon to make a stiff dough.
Shape dough into walnut size balls and roll in sugar. Bake on ungreased cookie sheet for 15 minutes.
