Cooking Thursday

I think many of you have made the popular Eclair dessert, made using graham crackers. I saw a twist on it, using chocolate graham crackers and peanut butter and had to try it.
We liked it, I think you will too!

Peanut Butter Eclair Dessert

1 box chocolate graham crackers
2 (2 1/4 ounce) boxes instant vanilla pudding
1 cup peanut butter
3 1/2 cups milk
8 ounces thawed Cool Whip
Topping:
2 squares bakers chocolate, melted
3 tablespoons melted butter
2 tablespoons corn syrup
1 teaspoon vanilla
1 1/2 cup powdered sugar
3 tablespoons milk

Line bottom of 9x13 pan with crackers.
Mix together pudding with milk and peanut butter. Beat on medium speed for 2 minutes. Fold in whipped topping.
Pour 1/2 of pudding mix over graham crackers.
Place another layer of crackers over pudding mix.
Pour rest of pudding mix over crackers, then add one more layer of crackers.
Mix topping ingredients to spreading consistency and spread over crackers.
Refrigerate for at least 10 hours before serving.

Things that make a Grandma smile!

Laura emailed me some pictures that made my day.  Alaina is getting very mobile and with that comes the ability to get into trouble.  I remember knowing trouble was brewing, when it got too quiet, and that's the stage she's in.  Here's a few pictures to make you smile.

Looking for a little snack...

"Helping" with her clothes...

"This basket is for toys?"

It's so fun to spin the toilet paper!

And the kleenex box is so fun to empty!

This one is my favorite.  Notice the shoe over by the tub, and that naughty little face peeking around the door.
Sometimes you just have to laugh, and then take a picture!
