Cooking Thursday

One thing I like about summer is all the fresh fruit that is available.  I made a fruit salad for our Fourth of July supper using a new recipe.  It was very colorful and pretty, and the dressing made a very refreshing salad.



Tropical Fruit Salad

1 pineapple, cut into bite size chunks
5 kiwis, sliced
2 cups strawberries, quartered
1 1/2 cup blueberries
2 bananas, sliced

Dressing:
1/3 cup lemon juice
1/4 cup lime juice
1/4 cup honey
1/2 teaspoon ginger
1/2 teaspoon poppy seeds
Stir lemon and lime juice together, then whisk in honey.  Stir in ginger and poppy seeds.
Set aside or place in refrigerator if serving later.
Shortly before serving, prepare fruit and place in large bowl.  Pour dressing over top, toss to coat and serve.

I made a salad similar to this a few months ago, but it called for way too many poppy seeds. I was picking them out of my teeth! But it was delicious!

It is very pretty! One of my daughters loves kiwi....something I almost never purchase. She just might love this recipe :)

Fresh fruit IS summertime to me, and that looks so good, and the dressing must make it extra good.

I love fresh fruit in the summer also. We made a similar salad for the 4th of July. We all liked it so much that we will be making many more. The fresh peaches have tasted so sweet and so good this year.

Oh I'm definitely trying this one this summer! I want to dive into that bowl right now!! ;) That dressing sounds delish. I'll just have to substitute green grapes for the pretty green color as my Hubby is allergic to kiwi.

I loved having fresh fruit in the rehab facility. Now, I want to get to the store for more, but having to take it easy for a day or so.
