Cooking Thursday

I recently made a slightly different salad to bring to a church picnic. If you like cherry tomatoes you'll enjoy this one!  It was very easy to throw together, it's healthy and it's yummy!




Cherry Tomato Salad

4 cups halved cherry tomatoes (I used a variety of colors)
1/4 cup green onions, chopped
4 tablespoons olive oil
2 teaspoons balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
Mozzarella balls - optional

Cut cherry tomatoes in half and place in bowl, stir in green onions.
Whisk all the other ingredients together, pour over tomatoes and green onions and stir together. Add Mozzarella balls if desired.
Allow to sit 10 minutes before serving, stir again before serving.
This can be refrigerated for up to three days.

The salad is delicious,
I make it too, but instead of mozzarella,
I add Greek feta cheese!!

I often make it in Summer with little Mozzarella balls. So fresh and good!
Today it will be very hot and I will make salads

I'm guessing this was a big hit at the church dinner. This picture of the cherry tomatoes speaks Summer loud and clear. I would love this one!!

A Caprese type salad is one of my favorites. Cheese, maters and a marinade..what could be better?

Very refreshing sounding! I make a cucumber and tomato salad often in the summer. Tomatoes and balsamic vinegar that goes together so well!

Well I'll be doing this because TG is growing the most beautiful and tasty cherry tomatoes! Just over on the side of the house! They are all red but I could buy some yellow ones! He has gorgeous Romas too! We've been enjoying them ever so much. xoxo
