Cooking Thursday

I love mint, and if you do too, I have  a yummy way to jazz up a boxed brownie mix.

Fudgy Mint Brownies

2 boxes fudgy brownies (I used Duncan Hines)
eggs, oil and water as directed on brownie pkg.
1 pkg York peppermint patties
1/2 teaspoon mint extract, divided
Preheat oven to 350 degrees. Prepare one box of brownies as directed on pkg and then stir in 1/4 teaspoon mint extract. Pour into greased 9x13 pan. Unwrap mint patties and lay on top of prepared brownies. (24 in all; 6 rows of 4) Prepare second brownie mix as directed, then stir in mint extract. Pour over mint layer. Bake for 35 minutes. Take out of oven and frost immediately.

Oh Gosh! The memories of your delicious recipes have easily come back to my mind after reading this and seeing the pic. I want that brownie!
This is Anita who blogged at Just Curious. I miss writing on it and reading blogs. It occurred to me how relaxing it is, so I hope to continue my visits to your site and others.
I've been obsessed over the last couple years with a book promotion blog, but maybe I'll get back to Just Curious and do both.

You've got to be kidding me. What happens after I eat the whole pan? Wait ... what am I saying? The York peppermint patties won't even make it onto the brownie mix. So we're good. xoxo
