It's the time of year for pumpkin! I recently saw this recipe for pumpkin bars and tried them out. They are yummy - especially with the cream cheese frosting!

Pumpkin Bars with Cream Cheese Frosting
4 eggs
1 cup oil
2 cups sugar
1 can (15 ounces) pumpkin
2 cups flour
2 teaspoons baking soda
1 teaspoon baking power
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon ginger
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
Combine first 4 ingredients in a large bowl. Sift together flour, baking soda, baking powder, salt, and spices. Add to pumpkin mixture and mix well.
Pour into greased and floured 12x18x2 pan.
Bake at 350 degrees for 20-25 minutes.
Cool and frost with cream cheese frosting.
Cream Cheese Frosting
8 ounces cream cheese, softened
3 tablespoons butter, softened
1 teaspoon vanilla
3 1/2 to 4 cups powdered sugar
1 tablespoon milk if needed
Beat together the cream cheese, butter and vanilla. Add powdered sugar and stir in milk to reach desired consistency. Spread over bars and enjoy!
