Slow Cooking Thursday



I made this chicken recipe recently and it is good!  Hope you enjoy it too!

Herbed Chicken and Wild Rice
1 pkg (6 oz) long grain and wild rice mix
6 boneless, skinless chicken breast halves
1 tablespoon oil
1 teaspoon butter
1 can cream of chicken soup
1 cup water
3 bacon strips, cooked and crumbled
1 teaspoon dried parsley
1/2 teaspoon dried thyme
1/2 teaspoon dried tarragon

Place rice in 5 quart slow cooker; set aside seasoning packet.  In large skillet, brown chicken in oil and butter. Add to slow cooker.
In small bowl, combine the soup, water, bacon, spices and the contents of the seasoning packet. Pour over top of chicken and rice.
Cover and cook on low for 5 to 6 hours or until chicken juices run clear.

Mmm! Sounds delish! i'm going to pass this along to my mom and niece, who are always looking for crockpot recipes. Actually, I'm going to print off a bunch of yours and give them to my niece at Thanksgiving. With her new little baby and working she really needs them.

Hi Mari,
Now that the weather is colder my crockpot will be getting heavy use. This is definately a dish I will be making. I appreciate your crockpot ideas, because they are always good ones!

I love the easiness of crock pot cooking. It keeps me from 'slaving' over the hot stove. Around here, I LIKE that 'cause it's usually mild to HOT temp-wise year 'round. Besides, it gives me a 'break' in cooking the next day too since the recipe is usually enough to serve 4-6. Right? I just made in fact chicken and wild rice last week. VERY similar to this [no bacon tho]....next time I'm gonna add the bacon bits.
