(Thanks for the sweet comments, and as far as the baked mashed potatoes go, yes..you use half and half, or cream, butter, salt and pepper. The only thing that changes is using baked potatoes, instead of boiled potatoes. They are really yummy, and certainly have a depth of flavor that isn't there in a boiled potato. Of course they are more time consuming ;)
Oh, and yes, you peel the potato...no potato skins.)
