Cooking Thursday

Since there are only two of us, we often have leftovers here.  There are some things I make, that I plan to have leftovers from and have some recipes that use them.  This is something I make using leftover roast beef.  So, one day we have a roast beef supper, and then I use the leftovers to make this yummy BBQ beef sandwich!

BBQ Beef
2 cups shredded, cooked beef

1 cup ketchup

1/2 cup vinegar

4 tablespoons chopped onion
2 tablespoons Worcestershire sauce

4 teaspoons packed brown sugar

1 teaspoon mustard
1 teaspoon garlic powder


Heat all ingredients, except beef to boiling over medium heat, stirring constantly. Reduce heat and simmer for 15 minutes. Stir roast into sauce and serve on buns.

That does look yummy. I always have leftover roast beef when I make it so I should make something like this sandwich :-)

Left overs are good! The BVS food they are feeding us are
not for old people, way to much salt and fat .
So we didn't do much cooking this week.

I have all the ingredients except the beef but I'm going to town today so I'll pick some up. It sounds really good.
