Cooking Thursday

This post is probably a week too late, if you had ham on Easter!  We did, and I was looking for a different way to use the leftovers.  I found this recipe and it was perfect for that last bit of ham.  Bob and I both thought it was really good - so next time you have leftovers, here's a good way to use them.




Deluxe Ham Casserole

3 cups elbow macaroni, cooked as directed
1 cup cubed ham
1 tablespoon minced onion
1/2 teaspoon garlic powder
1 can cream of celery soup
1 cup milk
1/2 cup sour cream
2 cups shredded cheese
1 cup frozen peas
1 6 ounce can french fried onions

Preheat oven to 350 degrees.  Spray large casserole dish with non-stick cooking spray.
Stir together the soup, sour cream and milk.  Stir in the minced onion and garlic powder.
Stir in ham, cheese and peas.  Then add 1/2 can of french fried onions.
Place covered, in oven for 40 minutes.  Then remove cover and sprinkle remaining french fried onions over top.  Bake another 5 minutes, until golden.

Looks really good. I am not much of fan of frozen peas, but it looks like I could just leave those out. Thanks for this great idea. Will try it next time I have some leftover ham!

Hi Mari! We didn't have ham for Easter, but I can always use a good recipe. I think the cheese and cream of celery soul would really make it creamy. (I do love cheddar cheese!)

I might crush up some potato chips on the top too. A little crunch!

Hi Mari we did have ham this year and it was good. I usually just make pea soup and savour ham for leftovers warmed up since I don't get to eat it so often. Your casserole looks like a good addition to the menu.
