Cooking Thursday

Today's recipe is perfect for all this snowy weather. I made it last week when I wanted soup but didn't have much time before I had to have supper ready.  It's a recipe I got from a friend who made it for a group of us and we all enjoyed it.  It basically involves opening cans and heating it up, which doesn't sound very appetizing, but I can assure you that it's really good.

Chicken Taco Soup
 
1 - 13 ounce can chicken
1 - 11 ounce can diced tomatoes with chilies
1 - 28 ounce can diced tomatoes
1 - 4 ounce can green chilies
1 - 15 ounce can kidney beans
1 - 15 ounce can black beans (drained and rinsed)
1 - 11 ounce can corn
1 package taco seasoning
1 package ranch dressing mix
 
Put contents of all cans, including liquids in crock pot. The only exception is the black beans(Drain them and then stir in with the rest).  Stir in taco seasoning and ranch dressing mix.  Heat on low for about 4 hours.
If you want this ready in a hurry, just put ingredients in pan and heat.
 
Serve with cheese and taco chips.  Yum!

yum....sometimes those canned recipes turn out great..just like my crab chowder! And you can't beat how fast they are! This one sounds really good. The ranch packet is intriguing to me...have to try it!

I make almost the same soup! I use whatever meat I have, sometimes beef or turkey or chicken. It makes a ton! We all love it. Thanks for sharing yours!

seriously....mighty fittin'!!! I've done this exact recipe. Well, almost. I never added the ranch dressing mix. Gonna try it tho, that way.

The men in this house do not prefer soup but since this recipe has chilies in it, they may change their mind. I will have to try this. Thanks for the recipe.

Hi Mari! Is this soup spicy? I can't handle too much spice (touchy stomach). I can eat tacos with taco seasoning, so maybe this would be ok.

My husband is making pea soup tonight. I love it. But I know people feel pretty passionately about it. Love it or hate it. (My husband can't stand it, he just makes it because I like it. Isn't he nice?)
