Cooking Thursday


The recipe I'm sharing with you today is from my daughter Laura.  She served it at Alaina's birthday party and everyone loved it, and wanted the recipe.
So here you go - a yummy pasta salad!

Rotini Pasta Salad

12 ounces whole grain Rotini  Pasta
14.5 ounce can black beans, drained and rinsed
14.5 ounce can corn
12 ounces grape tomatoes
1 bunch green onions, sliced
3 garlic cloves, finely chopped
4 tablespoons balsamic vinegar
8 tablespoons olive oil
1 tablespoon lemon juice

Cook pasta noodles to al dente.
Add black beans, corn, tomatoes and green onions to pasta and stir to combine.
Mix garlic, vinegar, olive oil and lemon juice.  Whisk or shake until emulsified.
Pour dressing over pasta mix and stir.
Refrigerate for several hours or overnight before serving.

Yum-o! I love this type of salad, especially with corn in it!
