Cooking Thursday


Laura had some yummy caramel corn at Alaina's birthday party a few weeks ago.  It had M&M's in it, so you can change it up for the season, depending on the color of M&M's you choose. It was fun and delicious too!

Super Caramel Popcorn

6 quarts popped popcorn
1 cup butter
1/2 cup light corn syrup
2 cups brown sugar
1 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon vanilla
1 1/2 cups M&M's

Combine butter, corn syrup, brown sugar and salt in saucepan.  Bring to boil, stirring occasionally. Boil for 5 minutes and remove from heat.  Stir in vanilla and baking soda.
Combine popcorn and M&M's in large roasting pan.  Pour sauce over top and toss to combine.
Place in 200 degree oven for 20 minutes.
Stir gently, then cook for another 10 minutes.
Remove from oven and allow to cool on baking sheets.

Yum! I love caramel corn. I could get in trouble eating it for breakfast. I never thought of mixing in M&Ms. Sounds good to me!
