Unicorn Ice Cream

I saw an episode of the Pioneer Woman recently where she made what she called Mermaid Ice Cream, and I thought it would be the perfect thing to do with the girls, so we tried it out the last time they were over.
They think unicorns are fun, so our version was called Unicorn Ice Cream.


Before they started helping, I beat heavy whipping cream and powdered sugar until it was stiff, stirred in sweetened condensed milk and vanilla.  Then it was time for the fun part.


We separated the whipped cream mixture into 3 bowls, and then stirred in gel food coloring to make it pink, blue and purple.
Then I took spoonful's of different colors and put them into a plastic sealing container.  The colors were alternated, and when I was done, the girls each shook it a little to help it settle.

After that, it was time for sprinkles and edible glitter.  They each got to sprinkle some on.


They were a bit heavy handed with the toppings, especially Ruby with the glitter.


It went into the freezer overnight.

The next morning, they were impatient to try it, but Grandma made them wait until mid morning.


 Here's the finished product - colorful and sparkly!



Alaina said it was ok, Ruby loved it.  I had to agree with Alaina.  It was kind of bland, but it was worth it just for the fun factor.

*No unicorns were harmed in the making of this ice cream.


Unicorn/Mermaid Ice Cream

2 1/2 cups heavy cream
1/4 cup powdered sugar
2 teaspoons vanilla
14 ounce can sweetened condensed milk
neon gel food coloring in blue, pink and purple
Assorted sprinkles and edible glitter

Whip heavy cream and powdered sugar until stiff. Gently fold in vanilla and condensed milk.
Separate mixture equally into 3 bowl.  Fold in blue, pink and purple food coloring to reach desired color.
Spoon the different colors of cream mixture into a loaf pan or sealing plastic container.  Spoon in a random pattern, a few spoonful's at a time, then gently shake to level out.
Sprinkle glitter and sprinkles over top and seal.
Place in freezer overnight.
When ready to server, scoop into individual bowls and add extra sprinkles if desired.

Oh that is cute. It put me in mind of a birthday cake made by a friend’s mom for her party when I was 9 or 10. It was a castle and she had frosted sugar cones (pointy ice cream cones) with pretty colors of frosting and had must have used some kind of sparkling decorator sugar. I’m sure making the unicorn ice cream memory will last a lifetime.

Oh so Grandma ate the ice cream too! Haha, one of the benefits of doing these fun things. I'd go heavy with the sprinkles too. So no little chocolate unicorn horns??

Hmmm. It looks pretty and sounds like fun. But just not sure it sounds delicious! Wonder what other flavors could be added to make it taste better? Almond extract? Lemon juice? Adding chocolate would make it turn dark, so that wouldn't work.

You are just the coolest Gram around. ❤️ I wonder if you added a little flavoring extract it might be better another time? Like almond extract would make it taste like cherry and is good with vanilla? Or let the kiddos pick out a favorite extract flavor. I know they even make root beer extract! Just a thought.
