Cooking Thursday

My friend Becky brought this in to work, where it was devoured. I made it this week and Bob pronounced it a 5 star recipe and is hoping I make it again soon.  If you have blueberries around, this is a wonderful way to use them!

Blueberry Pizza

1 refrigerated pie crust
fresh blueberries, about 1/2 quart
1 cup flour
1 cup sugar
1 stick butter
1 teaspoon cinnamon

Lay pie crust out on cookie sheet lined with parchment paper.  Press edge of crust to create a small lip.
Place blueberries on crust, leaving a 1/2 inch edge.
Stir flour, sugar and cinnamon together, then cut in butter.  Spread over blueberries.
Bake for 40 minutes at 350 degrees.
If you use too many blueberries, they'll seep out and make a mess, which is what happened to mine, but it still tastes good!

One of our pizza restaurants in town has blueberry pizza. It's great, for Bud especially, but I think they're too sweet.
