Cooking Thursday

One of Bob's favorite cookies is no bake cookies. However, most recipes include coconut, which we don't care for. I found a version with no coconut, but it has peanut butter. It's easy and they are so good!

Chocolate Peanut Butter No Bake Cookies

1/2 cup butter
1/2 cup cocoa
2 cups sugar
1/2 cup milk
1/2 cup peanut butter
5 cups oatmeal
1 teaspoon vanilla

Mix cocoa and sugar together. Stir in milk, and add butter. Heat in saucepan and bring to full boil. Add peanut butter and vanilla and stir in. Remove from heat, then add oatmeal.
Drop by tablespoon onto wax paper or cookie sheet. Let cool and enjoy!

One of our favorites as well. We just use 3 cups of oatmeal in ours. I cannot make these very often as I can eat the whole batch

Mari, what kind of oatmeal, the regular or quick cooking? I have all these ingredients on hand, except the only oatmeal I have is the traditional. I'd like to put these together Friday night

Interesting...this was also one of my mother's favorite cookies but we have always made them with peanut butter and didn't realize there was a recipe for coconut. We love the peanut butter ones.

Mary - it's quick cooking oatmeal, but I have done a mix of both when I didn't have enough and they turned out fine!

Do you know that I have never had a no bake cookie...never grew up on them, eaten them or made them! Maybe I should give these a try. Although we do love coconut....but the peanut butter with the cocoa sounds really good together!

Oh my goodness, are these ever good! I've been making them since junior high school. My BFF Elaine and I could eat an entire back in an evening! Ha!

YES I have made these and although I love coconut, these are PERFECT without it. Seriously addictive. More like candy than a cookie. xoxo
