Cooking Thursday


We had a nice ham dinner on Sunday, with lots of leftovers! I was looking for something to use that leftover ham in and I found this recipe. It was easy to throw together after work, was tasty and it's a different way to use ham. Next time I make it, I'll use about 3/4 of the bag of peas instead of the whole bag.

Ham Noodle Dinner

2 1/2 cups uncooked egg noodles
4 celery stalks, chopped
1 medium onion, chopped
1 tablespoon olive oil
2 cups cubed, fully cooked ham
1 can cream of mushroom soup
1 package (10 ounces) frozen peas
8 ounces shredded cheddar cheese
3/4 cup milk
2 teaspoons mustard

Cook noodles according to package directions and drain. Meanwhile, in large skillet, saute celery and onion in oil until tender.
Combine soup, milk and mustard; pour over vegetables in pan. Stir in noodles, peas and cheese.
Place in a greased 2 quart casserole. Cover and bake at 350 degrees for 60 minutes.
Yield: 4-6 servings, 1 1/2 cup each/ 372 cal each

I always enjoy your recipes. This looks like one we'd really like. Sadly no left over ham this Easter, I fixed 2 big pot roasts instead. I have good left overs from that though. YUM!!

What a great way to use up leftover ham! My husband would love this, but sadly, I don't like egg noodles. Ssshhhhh...we won't tell him about this dish!

I have made a dish like this with leftover ham,but I don't add a full bag of peas either. It is a really good dish.

Sounds yummy! As for peas, I'd add another half a bag. My hubby and I can never get enough of the little green wonders.

Your ham and noodle recipe is quite a bit like mine....but I never add mustard. I'm gonna have to try that....makes it a bit tangy, right?
