When I make a roast, I always buy a big one so I have leftovers. I have a few different things I do with leftover roast beef.
One thing I do is shred it and put it in a 9x9 pan. I pour some of the leftover gravy on top, and then put whatever vegetable (usually corn or beans) we had over that. I then cover the pan tightly with foil and freeze it. The next week I thaw it and put mashed potatoes on top. ( I usually use Bob Evans ready made potatoes). I bake it at 350 degrees for about 45 minutes. It makes a delicious Shepherds Pie that doesn't taste like leftovers.
Another way I use leftover roast is to make BBQ beef. This is a really good recipe for it.
BBQ Beef
2 cups shredded, cooked beef
1 cup ketchup
1/2 cup vinegar
4 tablespoons chopped onion
2 tablespoons Worcestershire sauce
4 teaspoons packed brown sugar
1 teaspoon mustard
1 teaspoon garlic powder
Heat all ingredients, except beef to boiling over medium heat, stirring constantly. Reduce heat and simmer for 15 minutes. Stir roast into sauce and serve on buns.

I think the Shepards pie version of leftovers sounds great. With only two of us here, I hesitate to buy a roast, but this makes me want to go out and buy one now. We love those kind of meals that can be stretched for a second day!

For supper today (because Jeff is out playing in a beach volleyball league) I had a bowl of raisin bran with craisins on top and quite a few m&m's with it. Aw I love Barbecue . Even the left over veg's sounds yummy I can buy a small roast and make this for one & give left overs to my daughter.

I usually make the left overs last a week. The family gets tired of it rather quick. I never think to freeze it and use it later. I need to get that into my head. I really like the dish with mashed taters

I'm not wild about shepherd pie.
I was moaning and groaning so much with the food in my food that I almost couldn't get mouth-watery over the bbq. That was just too bad.
I make extra, too. For roast beef sandwiches the next day. I like mine cold with Miracle Whip. Other people in my house like them warm. Ick.
I don't think they make a roast big enough for leftovers at our house. LOL! My biggest concern for Zack after hearing orientation... THey changed the meal plans to unlimited eating. You heard that right he can go and go as much as he wants all day long. They have found it actually saves them money because there isn't as much waste from having kids that can only eat 3 times a day. Then they were loading there plates up but couldn't eat it all so it was being dumped. Now that they know they can come back whenever they want they only take what they need. Makes sense but this is a scary idea for my "grazer".
