Slow Cooking Thursday

It's time for Slow Cooking Thursday again. I found this recipe not too long ago in Simple and Delicious Magazine. It makes a great meal.

Chicken and Red Potatoes
3 tablespoons flour
4 boneless, skinless chicken breast halves
2 tablespoons olive oil
4 medium red potatoes, cut in wedges
2 cups fresh baby carrots, halved lengthwise
1 (4 oz) can mushroom stems and pieces, drained
1 (4 oz) can diced green chilies
1 can cream of onion soup
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon dried rosemary
1/4 teaspoon black pepper

Place flour in ziploc bag. Add chicken, one piece at a time and shake to coat. In large skillet brown chicken in oil on both sides.
Place potatoes, carrots, mushrooms and chilies in a greased 5 quart slow cooker. In a small bowl, combine the remaining ingredients. Pour half of soup mix over veggies. Place chicken in slow cooker and top with remaining soup mixture. Cover and cook on low for 4 hours or until chicken juices run clear and veggies are tender.
Yield: 4 servings

This sounds quite tasty. I can't get green chilies or onion soup here but I'm going to forward it to my daughter who's on the lookout for some good slow cooker recipes :-)

I think I tried a recipe very similar to this when Caboose was smaller, probably about four or five. He told me when we started eating that I forgot to take the paper off the potatoes. I'd never done an unpeeled potato (other than baked, which of course is an entirely different story). It was hilarious.

What a joy to catch up with you this morning, you've had much goings on since my last visit.

I'm sorry to hear about Cleo, it makes my heart sad as our cat is about that age.

I loved the cute little skunk :)

As always, it's wonderful to catch up on your crock pot recipes! I have mine sitting on the counter for the summer so I can make wonderful meals when it's hot!
