Today's recipe is one that I got from my friend Jenny of I'm Having a Thought Here. She got it from her daughter Audrey. So, it comes recommended from several people. Chicken, cream cheese, ranch seasoning, black beans... what's not to like? Plus, it's so easy and cooks in the crock pot. It was yummy and will be on my rotation!
Fiesta Chicken
4 boneless, skinless chicken breasts
1 packet Fiesta Ranch Seasoning (I couldn't find this and used regular)
1 block cream cheese
1 can Rotel
1 can Mexicorn
1 can black beans, drained
Place in crock pot, cook on high for 4 hours. Shred chicken and serve over rice.

Dear Mari, it sounds and looks tasty. Thank you so much for sharing.
It is so delicious, with or without rice underneath it! TG loves it with rice but I eat it as-is! It's a classic comfort food! xoxo 🏴☠️
Oh and I forgot to say, if you can't find the fiesta ranch powder, just mix in some taco seasoning with regular ranch! xoxo 🏴☠️
Yummy
This sounds so good. I will give it a try soon. Thanks for sharing!

I just cleaned out my pantry and found a can of black beans that should be used soon...so this was a great post for me!! Thanks!
Girl, it does look good - but you and most people like spicey food - Rotel is hot for me - lol.
Looks good Mari, many thanks for sharing the recipe.
Thank you also for answering my question about yesterdays leaf picture (your Wordless Wednesday post) on my post today at the low carb diabetic blog... appreciated.
Enjoy the rest of Thursday.
All the best Jan
I'm a fan of recipes that require you to just put stove in a pan. So I wanna make this, but what is 'rotel'?
Now I did not see this post yesterday. What gives with Blogger. GRRR. Great recipe. Thanks for sharing. Janice
