Cooking Thursday

 This is a recipe I haven't made for some time because it's not the healthiest!  But it's good, it's quick, it uses left over chicken and Bob likes it, so we have it occasionally. And with Doritos, chicken, cheese and sour cream - you know it tastes good!



Chicken Dorito Casserole

1 bag Nacho Doritos, crushed
2 cups shredded cooked chicken
2 cups shredded cheese
1 can cream of chicken soup
1 can Rotel tomatoes - do not drain
1/2 cup sour cream
1/2 cup milk
1/2 package taco seasoning

Preheat oven to 350 degrees.
Spray a 2 quart baking dish with non-stick spray.
Mix together all ingredients, except Doritos.
Spread half of chicken mix in casserole, then half of Doritos and repeat.
Cover with foil and bake for about 35 minutes.

Yum! Why is it that the better something tastes, the worse it is for our health? But everything is O.K. in moderation.

it looks and sounds delish and in the past Bob and I would have scoffed this up. Why is it that the things that are the worst for us taste the best? that is the question I have always pondered.

I wonder if this would work with regular taco chips. I am trying to avoid Doritos with all the bad ingredients I dont need. Janice

Oh, that does sound "wicked good", as they say in Maine! Probably not on my diet either, but maybe I could take it to a church potluck dinner and just eat one small portion and let the others enjoy it too. I can almost smell it cooking now! Yummmm!

This makes my mouth water.... I would have to modify it for my hubby's tummy but as others have said ... why does the thing that sounds so divine be so bad for us?? Totally not fair.

Oh goodness yummy! I have used regular tortilla chips in dishes too. I think you should live a little as well. YUMMY!
