Cooking Thursday

I love tomatoes.  They are good anytime, but the best in the summer!  If you have lots of tomatoes to use, I have a recipe that is awesome!  I quite often make this for lunch for myself on my day off.  It's such a treat!

Roasted Balsamic Tomatoes

Large tomatoes 
Minced garlic or garlic powder
Olive oil
Balsamic vinegar
salt
pepper
sugar
Oregano, thyme, basil
Preheat oven to 450 degrees. Wrap a rimmed baking sheet with foil and line with parchment paper.
Cut tomatoes into 3/4 inch slices.  Remove seeds and juice. Poke holes in the bottoms of any end pieces.  Drain, cut side down on a paper towel or a few minutes.
Place tomato slices on prepared pan.  Sprinkle with garlic, then drizzle with olive oil and balsamic vinegar. Sprinkle with salt, pepper and sugar.
Place in oven for 20-25 minutes, until tomatoes are soft, dark and carmelized.
Sprinkle with herbs, allow to sit for a few minutes and enjoy!

I am loving balsamic anything Mari. I had never even heard of many of the seasonings I use regularly now. I guess Food Network helped educate me.

I do love tomatoes but they dont love me....too much acid. The recipe sounds so good!

Yummy looking! Question: How do you remove the seeds without messing up the rest? I've squeezed them but they always come out mushy. Will definitely try this recipe. Tomatoes are my favorite fruit. It's hard for me to see them as "fruit."

Could have used this when we raised our tomatoes.
But can still try this now, thanks.
It took me sooo long to chop a stock of celery.
for the freezer. but I did it and know I will be glad
when I need it.

Yum! Those look good! I have a recipe like that that uses roasted baby tomatoes like that mixed into pasta - so good!

Oh how I love home-grown tomatoes too! Not sure I could wait that long to eat them, though! LOL

I have tried recipes like this and never could see what other people liked about them, but I am going to try this one because it is different and uses Balsamic Vin. It sounds good!
