Cooking Thursday

I bet you've all had No-bake cookies, made with oatmeal.  They are one of Bob's favorites.  We aren't big fans of the coconut that is in the regular recipe, so I make this recipe with no coconut but it has some peanut butter.  You really don't taste the peanut butter, it just gives a creamier texture, and the cookies are yummy. I made these when the girls were here, so Ruby was helping!


Chocolate Peanut Butter No-bake Cookies

1/2 cup butter
1/2 cup cocoa
2 cups sugar
1/2 cup milk
1/2 cup peanut butter
3 1/2 cup oatmeal
1 teaspoon vanilla

Mix cocoa and sugar together. Stir in milk, and add butter. Heat in saucepan and bring to full boil. Add peanut butter and vanilla and stir in. Remove from heat, then add oatmeal.
Drop by tablespoon onto wax paper or cookie sheet. Let cool and enjoy!

And you can't go wrong with peanut butter.

These sound like they'd be a favorite for Bud. Everything he likes. And as for coconut, I'd too eliminate it....coconut in cookies just sounds like 'all kinds of wrong'. [I like Mounds tho!!]

Ruby is adorable and it looks like she can't wait to try one of those cookies! I used to make these when I was a kid. My friend, Elaine, and I would make a batch and eat them all during a sleep-over. We never put coconut in them. Our recipe is just like yours. Yummy stuff and very easy to make!
