What I've been doing


Yesterday I showed you what Bob has been working on.  I thought I should show you that I wasn't just sitting around while he worked!  :)
Our freezer isn't frost free, so every year I have to defrost it, before I start filling it back up.  It's not a fun job, but it feels great to have it done, and have everything all cleaned out!
I also spent a day making freezer meals.  You can see some of them on the top shelf.  On days that I know I'm going to work late, it's so nice to have something that's ready to pop in the oven if Bob makes it home before me.
I made Chicken Enchiladas, meatballs, Rigatoni, BBQ Chicken, Chicken Enchiladas and Chicken with veggies and brown rice.  I made 2 meals of each recipe, so I'm stocked for a while!

Ooh...I love your meals all stocked up! So smart and I think it's fun to do that!

I still have that chore of defrosting the freezer to do....need to use up some more things first but certainly this summer I will get that done! My Harry left it open a few times and the frost is THICK! haha.

Good grief! I'm lucky if I know at noon what we will be eating on any given night. You are so industrious and so clever. It's been eons since I heard of anyone defrosting anything! I remember those days. xoxo

Such a smart idea Mari!! It all sounds wonderful too. I love how beautifully stocked up it is in there too - you can easily see where everything is located. Great job hard working Lady. Now sit back and enjoy the rewards of that hard work. ;)

OOh ! You are so well organized and goal oriented! I do well to fix one meal a day. I cooked a chicken yesterday and made mashed potatoes and chicken gravy. I saved half the chicken for a Wild Rice dish for today. I thought I was doing well until I read your blog when I slapped myself on the forehead and fainted! You are somethin' else, dear friend.

You are definitely an inspiration! It takes discipline to get those meals prepared ahead of time. Much more healthy than buying ready-made at the store. It's been a long time since I had to defrost a freezer! I remember what a chore it was though!

Oh what a nice feeling that must be; to have everything organized and meals ready.

We used to have a freezer that we also had to defrost periodically, then it conked out on us. The new freezer defrosts itself now ...yay!

Good for you!! It's been a long time since I've done freezer meals in bulk. Not sure if I could ever find a day to do that or if my plantar fasciitis would even let me do it. As it is, I struggle to get through four or five hours on my feet at Anthony and Lori's on the days I do food prep for them. I'm trying all the things that helped before, but so far without results. )-:

You've reminded me that our freezer needs defrosting too, the only thing is it would be refilled with lovely home cooked food like yours!

Great job with the freezer meals! They are fantastic! I remember what a job it was to defrost the freezer...especially when it was a chest freezer. Yours looks awesome!
